Creamy Raspberry Chia Pudding for Glowing Skin

Chia seeds are an excellent source of minerals, omega-3 fats, and fiber that promote healthy skin from the inside out. Raspberries are a rich source of vitamin C and antioxidant compounds that promote collagen production and protect your delicate skin cells.

Recipe note: Use whole chia seeds in this recipe for a classic chia pudding, or grind them in a coffee grinder for a smoother texture. White chia seeds will produce a brilliant pink pudding, but black chia seeds work well too.
 
                  Ingredients
- ¼ cup white chia seeds, ground 
- 1 ½ cup unsweetened almond milk 
- 
                2 scoops Body Kitchen Collagen + Elastin 
- 1 cup raspberries 
- 2 pitted Medjool dates 
- 1 teaspoon maple syrup, or to taste 
- ½ teaspoon vanilla extract 
- ½ cup raspberries 
- ¼ cup shredded coconut 
To garnish
Directions
- In a blender, add the chia seeds, milk, Collagen + Elastin powder, raspberries, dates, maple syrup, and vanilla. Blend until smooth. Taste and add more maple syrup, if desired. 
- Divide the pudding between two jars, cover, and refrigerate for at least 2 hours or until set. 
- Top with additional raspberries and shredded coconut (or other toppings) and enjoy!
