They are high in protein from eggs, almonds, and Body Kitchen Youthful Beauty Advanced Collagen to support mood, energy, and skin. Lightly sweetened with real maple syrup and spiced with classic pumpkin pie spice, you’ll want to make a double batch!
Ingredients
1 cup pumpkin puree (homemade or canned)
2 large eggs
¼ cup maple syrup
¼ cup avocado oil
1 teaspoon vanilla extract
2 cups almond flour

3 scoops Body Kitchen Youthful Beauty Advanced Collagen
1 tablespoon coconut flour
½ teaspoon sea salt
¾ teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
½ cup chocolate chips (optional)
Directions
Preheat the oven to 350 degrees F. Line a muffin tin with parchment baking cups.
In a food processor, combine the pumpkin puree, eggs, maple syrup, coconut oil, and vanilla. Process until smooth, scraping down the sides as needed.
Add the almond flour, collagen, coconut flour, salt, baking powder, cinnamon, and pumpkin pie spice. Process again. Mix in the chocolate chips, if using.
Spoon muffin batter into the prepared tin, about two heaping tablespoons of batter per muffin.
Bake for 20-25 minutes or until a toothpick comes out clean. Cool. Enjoy!
