Heat a soup pot over medium heat. Add the olive oil, shallots, and a pinch of sea salt. Sauté for a few minutes until the shallots are tender.
Add the garlic and asparagus. Sauté for a few minutes more.
Add the broth and bring the soup to a boil. Then, reduce the heat, cover, and simmer for about 20-25 minutes until the asparagus is tender.
Transfer the soup to a blender (or use an immersion blender). Add the coconut milk, fresh spinach, collagen, and lemon juice. Blend until creamy (carefully!)
Return to the soup pot and season with salt and pepper to taste.
