Ingredients

  • 1 tablespoon olive oil
  • 2 small shallots, diced
  • 2 cloves garlic, minced
  • 1 pound fresh asparagus, washed well, thick ends trimmed, chopped
  • 4 cups bone broth or vegetable broth
  • ½ cup coconut milk, cashew milk, or half & half
  • 4 cups of fresh spinach
  • 4 scoops Body Kitchen Youthful Beauty Advanced collagen protein 
  • 1 tablespoon lemon juice, or to taste
  • Sea salt and black pepper, to taste

Directions

  1. Heat a soup pot over medium heat. Add the olive oil, shallots, and a pinch of sea salt. Sauté for a few minutes until the shallots are tender. 

  2. Add the garlic and asparagus. Sauté for a few minutes more. 

  3. Add the broth and bring the soup to a boil. Then, reduce the heat, cover, and simmer for about 20-25 minutes until the asparagus is tender. 

  4. Transfer the soup to a blender (or use an immersion blender). Add the coconut milk, fresh spinach, collagen, and lemon juice. Blend until creamy (carefully!)

  5. Return to the soup pot and season with salt and pepper to taste.
