Add collagen powder to your morning waffles for a protein-packed option to start your day. Make a double batch and reheat leftovers in the toaster for a quick, wholesome meal or snack.

This recipe is gluten-free and dairy-free (with a dairy option) and made with whole food ingredients, including almond flour, eggs, avocado oil, and blueberries. It’s packed with nutrition and won’t leave you hungry with low blood sugar like other waffles.

Please note that adding collagen powder will make the waffles brown a little more than other recipes you may be used to.

Ingredients

  • 1 cup almond flour

  • ½ cup tapioca flour
  • 1 tablespoon coconut flour
  • 2 scoops Body Kitchen Youthful Beauty Advanced Collagen
  • 1 teaspoon baking powder 
  • ½ teaspoon baking soda
  • Generous pinch of sea salt
  • 3 large eggs
  • ½ cup soy milk + 1 teaspoon apple cider vinegar (or ½ cup cow’s milk) 
  • 2 tablespoons avocado oil
  • 1 teaspoon vanilla extract
  • ½ cup fresh or frozen blueberries
  • Optional toppings: maple syrup, nut butter, ghee, etc. 

Directions

  1. Heat a waffle iron on medium heat while preparing ingredients.

  2. Add almond flour, tapioca flour, coconut flour, Body Kitchen Youthful Beauty Advanced Collagen, baking powder, baking soda, sea salt, eggs, milk, oil, and vanilla in a blender and blend until smooth, scraping down the sides as needed. Mix in blueberries by hand.
  3. Pour ¼ of the batter into the waffle iron and cook until done. Repeat with the rest of the batter.
  4. Serve warm with your favorite toppings. Store cool leftovers in a covered container in the fridge and reheat in the toaster.
