Collagen Healing Chicken Soup
Take a timeout and enjoy this classic comfort food. Perfect for warming up on a chilly day and a must-have when you’re under the weather, this delicious, soothing recipe is chocked full of mood-enhancing tryptophan.
Ingredients:
{makes 6-8 servings}
- 2 lbs. chicken thighs or breasts, cut into chunks
 - 1 tbsp. extra-virgin olive oil
 - 1 onion, diced
 - 1 bunch celery, diced
 - 1 bunch carrots, diced
 - 64 oz. bone broth or chicken broth
 - 2 tsp. sea salt
 - 1 tsp. dried basil
 - 1 tsp. dried oregano
 - ½ tsp. black pepper
 - 2 scoops Body Kitchen collagen
 
Directions:
- Heat the olive oil in a large, deep pot over medium-high heat for 2 minutes. Add the chicken pieces and allow to cook undisturbed for 3 before stirring. Season lightly with salt and pepper and continue to cook for another 5 minutes or until no longer pink.
 - Add onion, celery and carrots and cook until they’re softened about 7 minutes.
 - Add the broth, salt, basil, oregano and pepper. Cover and bring to a boil. Once boiling, reduce the heat to low and simmer for 20 minutes.
