Collagen Healing Chicken Soup

Take a timeout and enjoy this classic comfort food. Perfect for warming up on a chilly day and a must-have when you’re under the weather, this delicious, soothing recipe is chocked full of mood-enhancing tryptophan.

Ingredients:

{makes 6-8 servings}

  • 2 lbs. chicken thighs or breasts, cut into chunks
  • 1 tbsp. extra-virgin olive oil
  • 1 onion, diced
  • 1 bunch celery, diced
  • 1 bunch carrots, diced
  • 64 oz. bone broth or chicken broth
  • 2 tsp. sea salt
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • ½ tsp. black pepper
  • 2 scoops Body Kitchen collagen

 

 

Directions:

  1. Heat the olive oil in a large, deep pot over medium-high heat for 2 minutes. Add the chicken pieces and allow to cook undisturbed for 3 before stirring. Season lightly with salt and pepper and continue to cook for another 5 minutes or until no longer pink.
  2. Add onion, celery and carrots and cook until they’re softened about 7 minutes.
  3. Add the broth, salt, basil, oregano and pepper. Cover and bring to a boil. Once boiling, reduce the heat to low and simmer for 20 minutes.
  4. Turn off the heat and stir in collagen. Divide soup into bowls and serve.
